  • ½ cup 1 stick butter
  • ¼ cup 2oz superfine sugar, plus extra to finish
  • ¾ cup 6oz all purpose flour
  • 1 Tablespoon cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon ground cloves
  • 1/4 teaspoon white pepper
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon cardamom


  • Heat the oven to 375 degrees.
  • Beat the butter and the sugar together until smooth.
  • Stir in the flour and spices to get a smooth paste. Turn on to a work surface and gently roll out until the paste is ½ inch thick.
  • Cut into squares (or any other smores shape you prefer) and place onto a baking tray. Sprinkle with remaining superfine sugar and chill in the fridge for 20 minutes.
  • Bake in the oven for 15-20 minutes, or until pale golden-brown. Set aside to cool on a wire rack.


Store in an air-tight container.  May be frozen for several weeks.
