Olive Oil Granola

For brunch, serve with assorted yogurt options (have you tried almond milk yogurt yet?) and seasonal fruit for a build your own parfait. This has become something I make without even thinking about it. Yet people are always awed by it. So customizable - it's great! (makes one large batch)

  • 5 cup old fashioned oats
  • 4-5 cups coconut flakes, nuts, seeds of your choice
  • 1 cup coconut sugar or brown sugar
  • 3/4 cup olive oil
  • 1 1/4 cups maple syrup
  • 2-3 tsp cinnamon, cardamom, baking spice or combination
  • 2 cups dried fruit chopped, if necessary, into bite-sized pieces


  • Preheat oven to 300 degrees.
  • Line a rimmed baking sheet with parchment paper and grease well.
  • In a large bowl, combine oats and coconut flakes/nuts/seeds.
  • Then add coconut (or brown) sugar, olive oil, maple syrup, and cinnamon/cardamom/other baking spice of your choice. 
  • Bake for 45 minutes at 300. Stir carefully. 
  • Bake an additional 30 minutes at 300 and let cool completely before adding about 2 cups dried fruit (chopped if needed).
